A Tangy Twist: Bhindi Masala with Ashok Turmeric and Cumin

Introduction: Bhindi Masala, or spicy okra, is a delightful dish that combines the earthy flavor of okra with a tangy and spicy masala base. With Ashok Turmeric and Cumin, you can elevate this simple recipe to a restaurant-quality dish. This recipe is perfect for a wholesome lunch or dinner, served with warm roti or steamed rice.

Ingredients:

For the Bhindi (Okra):

  • 500g fresh okra (bhindi), washed, dried, and cut into 1-inch pieces
  • 2 tbsp cooking oil
  • ½ tsp Ashok Turmeric Powder
  • Salt to taste

For the Masala:

  • 2 tbsp cooking oil
  • 1 tsp Ashok Cumin Seeds
  • 2 medium onions, finely chopped
  • 2 medium tomatoes, chopped
  • 1 tsp ginger-garlic paste
  • 1 tsp Ashok Red Chili Powder
  • 1 tsp Ashok Coriander Powder
  • ½ tsp Ashok Garam Masala
  • ½ tsp dry mango powder (amchur) or juice of half a lemon
  • Fresh coriander leaves for garnish

Preparation:

Step 1: Cook the Okra

  • Heat 2 tbsp of oil in a pan over medium heat.
  • Add the okra pieces, sprinkle with Ashok Turmeric Powder and salt, and sauté until they are lightly browned and no longer slimy. Remove and set aside.

Step 2: Prepare the Masala Base

  • In the same pan, heat 2 tbsp of oil and add Ashok Cumin Seeds. Let them splutter.
  • Add the chopped onions and sauté until golden brown.
  • Stir in the ginger-garlic paste and cook until the raw aroma disappears.
  • Add the chopped tomatoes and cook until they soften and the oil separates from the mixture.

Step 3: Spice It Up

  • Mix in Ashok Red Chili Powder, Ashok Coriander Powder, and salt. Cook for 2 minutes to release the spices’ flavors.
  • Add the sautéed okra to the masala and mix gently to coat the pieces evenly.
  • Sprinkle Ashok Garam Masala and dry mango powder (or lemon juice) for a tangy twist. Cook for 2-3 minutes on low heat.

Step 4: Garnish and Serve

  • Garnish with fresh coriander leaves.
  • Serve hot with roti, paratha, or steamed rice.

  • Dry the Okra Thoroughly: Ensure the okra is completely dry before cutting to avoid stickiness while cooking.
  • Cook on Medium Heat: Sauté the okra on medium heat to achieve a slightly crisp texture.
  • Balance the Tanginess: Adjust the amount of dry mango powder or lemon juice based on your preference.
