Authentic Biryani with Ashok Biryani Masala

Introduction:Biryani is not just a dish; it’s an emotion, a symphony of flavors and textures that represents the rich culinary heritage of India. Ingredients:

For the Rice:

  • 2 cups basmati rice (soaked for 30 minutes)
  • 4 cups water
  • 2-3 cloves
  • 2-3 green cardamoms
  • 1 bay leaf
  • 1 tsp salt

For the Biryani:

  • 500g chicken or mutton (bone-in, cleaned)
  • 2 medium onions, thinly sliced
  • 2 medium tomatoes, chopped
  • 1 cup yogurt
  • 2 tbsp ginger-garlic paste
  • 3 tbsp cooking oil or ghee
  • 2 tsp Ashok Biryani Masala
  • 1 tsp Ashok Turmeric Powder
  • 1 tsp Ashok Red Chili Powder
  • ½ tsp Ashok Garam Masala
  • Salt to taste
  • A pinch of saffron (soaked in 2 tbsp warm milk)
  • Fresh coriander and mint leaves for garnish

Preparation:

Step 1: Cook the Rice

  • In a large pot, boil water with cloves, cardamoms, bay leaf, and salt.
  • Add the soaked basmati rice and cook until it’s 70% done (the grains should still have a bite).
  • Drain the rice and set aside.

Step 2: Prepare the Biryani Base

  • Heat oil or ghee in a heavy-bottomed pan.
  • Add the sliced onions and sauté until golden brown. Remove half of the fried onions for garnish.
  • Add ginger-garlic paste and cook until the raw aroma disappears.
  • Stir in the tomatoes and cook until soft and mushy.
  • Mix in Ashok Biryani Masala, Ashok Turmeric Powder, Ashok Red Chili Powder, and salt. Cook for 2-3 minutes.
  • Add the chicken or mutton and yogurt. Cook until the meat is tender and coated with the masala.

Step 3: Layer the Biryani

  • In the same pot or a separate heavy-bottomed pot, layer half of the cooked rice.
  • Add the meat mixture and spread it evenly.
  • Layer the remaining rice on top.
  • Drizzle saffron milk over the rice and sprinkle with fresh coriander, mint leaves, and the reserved fried onions.

Step 4: Dum Cooking

  • Cover the pot with a tight-fitting lid. If the lid isn’t tight, seal the edges with dough.
  • Cook on low heat for 20-25 minutes to allow the flavors to meld (this is called “dum” cooking).
  • Turn off the heat and let the biryani rest for 10 minutes before serving.

  • Quality Rice: Use long-grain basmati rice for the best texture and aroma.
  • Meat Tenderness: Marinate the meat with yogurt and Ashok Biryani Masala for at least an hour before cooking.
